| Beefy Enchiladas |
| | | 350º for 30 min | | Brown 1# ground beef in large skillet. Drain. Add 1 small jar of picante sauce (I use Pace mild), 6 oz of sour cream (suitable for baking), 1 can cream of mushroom soup and 1½ c grated cheese. Warm 10-12 tortillas one by one for 15 seconds in microwave on High as you fill each with ¼c+ mixture and place in baking pan. Extra mixture goes on top, along with extra cheese. Pour 1/3 c water around edges of pan to keep bottom of tortillas soft as they bake. | | | | Fresh Strawberry Pie | Bake 9” pie shell til golden. Cool. Mix 1 c sugar with 3 T cornstarch in heavy saucepan. Add 2-3 c crushed strawberries and cook over low heat for 15-20 min til thickened. Cool. Soften 4 oz of cream cheese and mash with ¼ c cream. Spread over cooled crust. Arrange whole berries over spread cream cheese. Pour cooled mixture over berries. Beat remaining 4 oz cream cheese with remainder of pint of whipping cream. Add sugar to taste and spread over all. Garnish with more berries. Refrigerate. Have a favorite recipe?
